Available Variety Spotlight: Greenwave Mustard Greens

From Sow Right Seeds: "Greenwave Mustard Greens (Brassica juncea) has spineless, highly frilled leaves that grow to 2 feet. Harvest as a baby leaf or wait until it matures for a deliciously spicy mustard green. Greenwave's spicy flavor mellows when cooked. Cold hardy, but also resistant to bolting in hotter weather. 50 days to maturity. Add this delicious and nutritious spicy green to your favorite soups, stir-fries, and salads. Mellow the spice out by cooking it down." Thanks to the generosity of Sow Right Seeds, our seed library has plenty of this variety to share!

Mustards are a great plant to start early here in Middle Tennessee: they can take the chilly weather and varieties like Greenwave won't bolt (start producing seeds) right away when things start to heat up outside. Once they do start bolting, mustards are very easy to collect seeds from! Sounds like a great plant to try and then you'll have plenty of seeds to keep for yourself AND to share with the library!
